Easter comes twice a year for Nikos Cakes owner Yianni Poupouzas with the Easter holidays this weekend followed by Greek Easter next weekend on April 8.

"It's by far our busiest time of year," he says. "Trade more than doubles. We take advantage of all the public holidays and time off people have over the Easter long weekend and then we double dip over Greek Easter as all the Greek community descends on our business."

Customers queue out the door of the bakery in Melbourne's Greek heartland of Oakleigh for Easter bunnies, eggs and the traditional Greek tsoureki, a plaited brioche bread with a red egg in the middle.

"We sell thousands of those for Easter," Poupouzas says. "The other thing we sell a lot of of is candles because it is traditional for Greeks to take a candle to church with them for midnight mass. We sell ones with football team logos and Disney characters for the younger kids."

Nikos Cakes was started by Poupouzas' parents 30 years ago and with turnover estimated at over $1 million, Poupouza says it's "all hands on deck" for Easter with up to 50 staff on the floor.
